Ingredients

  • 2 bananas (ripe) + a few slices
  • 1/4 cup of almond butter (or peanut butter if not paleo)
  • 1/4 cup of water
  • 1 cup of almond meal
  • 3/4 cup of rolled oats (blended into flour)
  • 1/4 cup of walnuts or pecan nuts (chopped)
  • 1/4 cup of dark chocolate chips
  • 1 tbsp of vanilla extract
  • 1 tsp of baking soda
  • 1 tsp of cinnamon powder
  • 1/2 tsp of salt

Instructions

Step 1

Preheat the oven at 180°C and prepare a baking sheet with baking paper on.

Step 2

In a big bowl mix banana, nut butter, water and vanilla extract with a hand mixer.

Add the almond flour, baking soda, cinnamon and salt and mix again until well combined.

Add the oats (blended into flour), chocolate chips and walnuts and stir with a spatula.

Step 3

Form small balls with the dough and place them on the baking sheet with enough space between each. Add a banana slice on top of each ball and press slightly to flatten it out a little bit to give a cookie shape.

Step 4

Bake for 20 minutes at 180°C, remove from oven and let them cool until completely cold.

Step 5

To be enjoyed without moderation, as a snack or at the coffee break!
