Ingredients

  • 1 + 3/4 cup of rice flour
  • 1/2 cup of chickpea flour
  • 1/2 cup of coconut sugar
  • 2 eggs
  • 1/2 cup of peanut butter
  • 1 tbsp of vanilla extract
  • 1 tsp of baking soda

Instructions

Step 1

Preheat the oven at 180°C and prepare a baking sheet with baking paper on.

Step 2

In a large bowl, combine all dry ingredients. Add eggs and mix. Add peanut butter and vanilla extract and mix until you have a nice dough.

Step 3

Shape the dough into small balls and place them slightly spaced apart. Press with your fingers to flatten them a little.

Step 4

Bake for 15 minutes at 180°C, remove from oven and let them cool until completely cold.

Step 5

Perfect as a snack, at the coffee break or for the kids’s snack!
