Goat Cheese Honey & Spinach Toastie

Ingredients
- 2 slices of gluten-free bread* (see note)
- 4 slices of goat cheese
- 1 handful of fresh spinach
- 1/2 onion (finely chopped)
- 1/2 tbsp of honey
- 1 drizzle of olive oil
- A pinch of salt
- A pinch of pepper

Step 1
In a frying pan, sauté the onions with a dash of olive oil until golden brown.
Step 2
On each piece of bread, place a few spinach leaves, the onions, the goat cheese slices, add a pinch of salt and pepper, a few more spinach leaves and close the sandwich.
Step 3
Add a drizzle of olive oil to the pan then toast the sandwich over medium heat on both sides until the bread is crispy.
(If you have a sandwich maker, you can toast it in your machine.)
Step 4
Serve immediately with a small salad or a soup!
Perfect for lunch!
Notes
* Choose a bread like sourdough or whole grain bread for an even healthier and crunchier version !
