Ingredients

  • 2 slices of sourdough or gluten-free bread* (see note)
  • 2 zucchinis (1 green ; 1 yellow)
  • 1 + 1/2 tbsp of ricotta
  • 1 tsp of olive oil
  • A few fresh basil leaves
  • A pinch of salt
  • A pinch of pepper
Toast - Ricotta & Zucchini duo
Instructions

Step 1

Toast the slices of bread in the toaster or in the oven.

Step 2

In the meanwhile, cut the zucchini into thin strips using a vegetable peeler.

Place the zucchini strips on a plate and drizzle the olive oil over them, along with a pinch of salt and pepper. Toss gently to distribute the oil over all the zucchinis.

Step 3

Spread the ricotta on the bread slices, then place the zucchini strips on top.

Add a few basil leaves and voilà!

Step 4

Serve immediately with a small salad or a cold soup!
Perfect for lunch!

Notes

* Choose a bread like sourdough or whole grain bread for an even healthier and crunchier version !
